What is Beetroot?  The beetroot is the taproot portion of the beet plant. It is one of the many varieties of the genus Beta vulgaris, all of which are mostly grown for their edible taproots and leaves. Commonly known for being a food source, beetroot is also used as a medicinal plant and as a food colorant because of its deep red/purple hue.
